Plum and Thyme Smash

Try this tasty and original cocktail created using our dry aromatic gin and gorgeous La Folie sparkling rosé to celebrate the festive season. Let us know how yours turns out on Instagram or Facebook?


  • 50ml Mirabeau Rosé Gin
  • 2 plums
  • 6 thyme sprigs
  • Juice from one lemon
  • 4 tbsp thyme simple syrup
  • Mirabeau La Folie Sparkling Rosé

For the Thyme Simple Syrup

In a pan, dissolve 100g caster Sugar in 100ml water and bring to a boil. Immediately remove it from the heat and add the thyme sprigs, stir, and let cool. Chill until ready to use.

To make the Cocktail

Peel and chop 2 plums. Muddle the plums with the thyme simple syrup and lemon juice until all of the plum juices have been released. Strain the Mirabeau Rosé Gin and Plum Muddle into a shaker with ice. Shake vigorously and pour over crushed ice evenly between two glasses. Top off with La Folie sparkling rosé and garnish with extra plum slices and thyme sprigs. Santé and enjoy!
